- 1 cup sona masoori rice(soaked 2 hrs)
- 1/4 cup grated Coconut (optional)

- Prawn ghee roast masala powder

- 2 tsp coriander seeds
- 1/2 tsp methi
- 1/4 tsp mustard seeds
- 10-12 peppercorns
- 1/2 tsp jeera
- 1/2 tsp saunf/fennel
- 4-5 cashews
- 4 tsp coconut powder
- 1 tsp tamarind paste
- 1 small piece of jaggery
- Tempering ingredients
- 1 tsp garlic paste
- leaves Curry
- 1 Onion
- 1/4 cup Ghee(you can also reduce the quantity if you want)
- 200 gms prawns marinated with 2 tsp of masala paste and salt

- Grind the soaked rice to a fine paste along with coconut adding very less water.
- The ground batter should be smooth,sillky..(not grainy)
- Transfer it to a bowl,add water to make it a very thin flowy batter. Add salt accordingly.
- Brush oil on non-stick tawa. Make dosas.
- Prawn ghee roast 1.Dry roast all the ingredients except jaggery and tamarind paste and make a fine powder. 2.Add tamarind paste to the ground powder with a little bit of water and grind it to a smooth paste. This is the ghee roast masala paste.(Note: If you wish to have the ghee roast as a dry starter, you can just marinate the prawns with the masala paste, garlic paste, jaggery powder,salt and shallow fry in ghee with a sprinkle of curry leaves.
- Since I am making a semi dry version, I have to add little bit of tempering 1.Fry the marinated prawns seperately in ghee. Fry it on low flame and only until its half cooked because we will be cooking it further in the ghee roast masala later. This step of frying the prawns seperately is important as this locks the prawns from oozing out water later in the gravy thus maintaining the perfect texture of the ghee roast.
- Moreover, prawns tend to become rubbery when overcooked. 2.Take a pan,add ghee,curry leaves,garlic paste,onion and saute.Add the masala paste,jaggery,salt and fry on low flame until the ghee seperates from the masala. 3.Now add the half cooked prawns and saute for sometime or until prawns are completely cooked. Serve hot.
