- For Marination :
- 500 grams Chicken
- 1/2 cup yoghurt
- 1 tsp Kashmiri chili powder
- 2 tsp Coriander powder
- 1/2 tsp turmeric powder
- 1 tsp ginger garlic paste
- 1/2 tsp pepper powder
- 1 tbsp lemon juice
- as per taste Salt
- To roast and grind :
- 1/2 tsp saunf
- 1/2 tsp peppercons
- 1/4 tsp jeera
- 1/2 inch cinnamon stick
- 2 cloves
- 4 fenugreek seeds
- 1 tbsp coriander seeds
- 3 garlic cloves
- 1/2 ginger
- 3-4 dry red chili (spicy)
- Other Ingredients:
- 1 tbsp tamarind paste
- 1 tsp jaggery
- 4 tbsp ghee
- 1 sprig curry leaves
- as required Coriander leaves for garnish
Steps to make to make Chicken Ghee Roast
- In a bowl take cleaned and drained chicken. Add in all the ingredients for marination. Mix well and let it marinate for 1 hour.
- In a pan heat 1/2 tbsp ghee on medium flame. Add in roughly chopped garlic, ginger, and all other ingredients mentioned under roast and grind. Roast for a min until aromatic. Cool and grind to a paste along with tamarind paste.
- In a pan heat 1/2 tbsp ghee and add marinated chicken along with the marinade. Cover and cook until chicken is cooked.
- Meanwhile chicken is cooking in another pan heat rest of the ghee and temper with curry leaves. Add ground paste, salt and fry until aromatic. Add water not to burn the spices and fry until ghee separates. By now chicken too is cooked.
- Add the fried masala to the chicken and mix well to coat. Add powdered jaggery and adjust salt. Continue frying the chicken for 8-10 minutes until chicken is coated with thick layer of masala and ghee separates. Finally garnish with coriander leaves.
- Serve hot Chicken Ghee Roast with Neer Dosa.
