- add remaining chicken stock. Taste. You may like to use cilantro, not my thing, but some people like it. If re-seasoning needs to happen, now is the time, as you will not again be able to taste for a while after the roast goes in, for food safety reasons.
- Add Roast to cooking vessel, making sure that the liquid is high enough to cover the roast. This will need to cook at a minimum 6 hours, preferably 8.
- chop, tomatoes, olives, green onions. these are garnish/toppings. Anything you like with Mexican style cuisine would be acceptable, Cilantro for example would go well.
